Modelagem Matemática do Crescimento de Microrganismos em Alimentos

Este trabalho teve por objetivo estimar o efeito que diferentes regimes de temperatura exercem sobre o crescimento de microrganismos em alimentos. Para tal fim, foi desenvolvido um modelo matemático que consiste de um sistema composto por duas equações diferenciais de primeira ordem, os quais descrevem diferentes aspectos do crescimento de populações. A temperatura foi incluída através do modelo da raiz-quadrada, o qual é utilizado com frequência na microbiologia e expressa a dependência da taxa de crescimento dos microrganismos com a temperatura. Foram avaliados regimes de temperatura isotérmicos e regimes dinâmicos, nos quais a temperatura variava com o tempo. Dados experimentais de crescimento de Pseudomonas em leite num regime isotérmico foram ajustados ao modelo e forneceram bom ajuste indicando que o modelo consegue reproduzir com boa precisão o crescimento deste microrganismo. Não foi possível avaliar o modelo para regimes dinâmicos da temperatura pela indisponibilidade de dados experimentais devido à dificuldade de realização de tais experimentos. Entretanto, foram feitas simulações com perfis teóricos de temperatura, os quais podem fornecer indícios importantes do crescimento de microrganismos em situações mais realísticas de coleta, transporte e armazenagem de alimentos nos quais há uma grande flutuação da temperatura.References
